At the edge of the Gyeongui Line Forest Trail in Gongdeok, there’s a place with a beautiful traditional eave that catches your eye. This is Sachel (사철), which literally means "Four Seasons."
I’ve always heard people say, "Seasonal food is the best," but honestly, I never knew what was in season or how to properly cook those ingredients. I realized I didn't need to be a seasonal expert—I just needed a chef who was. That’s why I headed to Sachel, a place dedicated to the art of seasonal Korean cuisine.

The Magic of Spring: Jjukkumi & Shepherd's Purse
Spring in Korea is special because of two things: Jjukkumi (Webfoot Octopus) and Naengi (Shepherd's Purse).

Why is Jjukkumi so special in spring? It's right before their spawning season, meaning they are at their plumpest and most tender. The highlight is the "rice"—the eggs inside the head that have a creamy, nutty flavor similar to glutinous rice. Whether in a Shabu-shabu stew or blanched (Sukhoe), it’s the ultimate spring delicacy.

Then there’s the pairing of Naengi and Yukjeon (Beef Pancakes). It’s a masterclass in balance. The rich, savory oiliness of the beef is perfectly countered by the fragrant, slightly bitter, and peppery kick of the Shepherd's Purse. The crunch of the Naengi roots against the soft beef adds a delightful layer of texture that makes every bite interesting.

What Makes Sachel Special?
- A Circular Menu: True to its name, the menu rotates. Minari and Jjukkumi in spring, Gizzard Shad (Jeoneo) in autumn—there’s always something new to discover.
- The Minari "Kick": Water parsley is the secret weapon here. It’s used generously in the beef tartare and pancakes to provide a clean, refreshing finish.
- The Terrace: On a nice day, sitting on the terrace looking out at the Gyeongui Line Forest Trail is pure bliss. It’s the perfect spot for a date or a relaxed after-work drink.

Our Meat-Focused Feast
We were in the mood for something hearty, so we went for a meat-heavy spread: the Spring Shepherd’s Purse Beef Pancake and a half-portion of the Signature Beef Tartare. To drink, we skipped the usual beer and went for a plum-infused refined rice wine (Cheongju) that paired beautifully with the seasonal flavors.

The beef tartare was a work of art. The vibrant color of the meat, the bite of the onion and garlic, and the overwhelming freshness of the Minari brought out 10,000% of the flavor. When the plum wine arrived, I felt like all was right with the world.

And then came the Yukjeon. It was lean, clean, and not greasy at all. Pro-tip: dip it into the pickled garlic sauce for an absolute "heavenly" moment. I’m convinced paradise is actually located in Gongdeok.

I plan to visit Sachel for every season. Spring was a success, and I can't wait to see what summer, autumn, and winter have in store. If you want to feel the true energy of spring, get yourself to Sachel. It’s a completely "rational" choice.

- Why: This section of the forest trail is much quieter than the famous Yeonnam-dong part. In spring, it’s a cherry blossom tunnel. Stop by Dear Moment for the best views or Pomellow Bean for some of the city’s best hand-drip coffee.
Course 2: [Gourmet] Old-School Markets & Trendy Brunch Experience the juxtaposition of Gongdeok’s famous market food and modern brunch spots.
- Route: Sachel → I Am Bagel (Brunch) → Gongdeok Jokbal/Jeon Alley → Fritz Coffee (Dohwa Branch)
- Why: I Am Bagel offers amazing New York-style bagels with a park view. For dinner, the Jokbal (Pig trotters) and Jeon (Korean pancakes) alleys offer a lively, traditional market atmosphere. End with coffee at Fritz, a legendary cafe set in a beautiful renovated Hanok (traditional house).
Course 3: [Night View] Urban Evening Walk & Hanok Pubs Enjoy the city lights filtering through the trees and end your day at an atmospheric pub.
- Route: Sachel → Forest Trail Night Walk → Sasimgadeuk (Hanok Pub) → Old-school LP Bar near Mapo Station
- Why: The forest trail takes on a magical vibe at night. Sasimgadeuk is a stunning Hanok cafe by day and wine bar by night. If you’re a music lover, head to Oldies near Mapo Station to request songs on vinyl and soak in the nostalgia.
💡 Local Pro-Tip: Gongdeok Station is a major hub (Lines 5, 6, Airport Railroad, and Gyeongui-Jungang). It’s incredibly easy to get to, so I strongly suggest using the subway. If you must drive, try the Yeomni Public Parking nearby.
