Horizon of Flavors: Discovering Jipyeongseon, the Hidden Fusion Korean Gem in Hapjeong [지평선, 퓨전 한식과 분위기를 다잡은 곳! 합정 술집 [마포 / 합정]]
I opened my eyes and found myself standing right in front of Exit 7 of Hapjeong Station. If you know Seoul, you know that this specific area—stretching from Exit 7 toward the Han River—is my absolute favorite pocket of the city. It’s a neighborhood filled with charming little shops, warm-hearted owners, and a crowd that appreciates the finer, quieter things in life.
Nestled uniquely on what I’d call the "1.5th floor," Jipyeongseon (meaning "Horizon" in Korean) greeted me with its adorable presence. I have a theory about the name: perhaps it represents the line that divides the first and second floors, a horizon where different worlds meet. At this fusion Korean pub in Hapjeong, I found myself ironically craving Western-style dishes, yet the atmosphere was distinctly and beautifully local.

A Toast to "Dowon-gyeorye" (Peach Distilled Spirit)
We decided to order Dowon-gyeorye. These days, I find myself reaching for a single bottle of exquisite traditional liquor rather than several bottles of bitter, cheap booze. Dowon-gyeorye is a peach-fermented spirit that even my friend "Ham-jjang," who usually struggles with alcohol, can enjoy. The scent is simply divine.
Distilled from peaches grown in Yeongdong, Chungcheongbuk-do, this spirit offers a clean finish and a subtle, natural fragrance that avoids the cloying artificial sweetness of sugar. Fun fact for history buffs: the famous "Oath of the Peach Garden" (Dowon-gyeorye) from the Romance of the Three Kingdoms is actually a fictional addition not found in the official historical records (Sanguozhi). But regardless of history, this spirit is the real deal—pure peach distillation at its best.

At Jipyeongseon, the drink menu is a playground of its own. Whether you're into distilled spirits, highballs, Cheongju (refined rice wine), Makgeolli, Soju, or Beer, there’s something for everyone. They even offer pairing recommendations, so don’t hesitate to ask the owner which drink best complements your choice of appetizer.

Why Locals Love Jipyeongseon (Big Data Insights)
- The Unique 1.5-Floor Structure: Being slightly elevated from the street level, the shop escapes the usual bustle of Hapjeong. It feels like a secret attic or a private hideout—calm, intimate, and perfect for deep conversations.
- Exotic Ingredients meet Traditional Flavors: From chive pancakes infused with fragrant "Bang-a" leaves to grilled pork skirt meat served with water dropwort and South American chimichurri sauce, the menu is creatively unpredictable.
- Professional Liquor Curation: The staff provides detailed and friendly explanations about the scents, alcohol content, and pairings for their vast selection of traditional liquors and wines, making every guest feel truly well-served.

The interior is small but lives with a refined mood. The warmth of the wood tones makes this the kind of place where you’d want to host a meaningful gathering—perhaps even a "Cheong-mo" (invitation gathering) for a wedding.

You can see the meticulous care in every detail. It’s true what they say: good things happen in good spaces. (Case in point: the blind date at the next table seemed to be going exceptionally well! ^_^)

The Menu: A Fusion Delight

The menu might seem unusual at first glance, but what I loved most was that these were substantial dishes that could easily serve as a full meal, not just light snacks.

Amusingly, the drink list is longer than the food menu! It felt like a subtle nudge: pick your snack, then take your time choosing the real star of the show—the liquor. We ultimately went with the Ragu Pasta and the Dowon-gyeorye spirit, a combination that promised a unique harmony.

Even the water here is special. It’s not just plain tap water or instant barley tea powder; it tastes like real, freshly boiled barley tea. When even the water is delicious, you know the rest of the meal will be superb.

Pasta or Pub? Why not both!
I honestly thought I was in a high-end pasta specialty shop. The Ragu sauce had been simmered for a long time, resulting in an incredibly deep, rich flavor that hit all the right notes. I’m convinced the owner must have studied Western culinary arts but harbors a deep, unwavering love for Korean ingredients.

One bite of Ragu pasta, followed by a toast of Dowon-gyeorye. The clean peach spirit perfectly cuts through the intense richness of the Ragu. Even my friend, who usually shies away from spirits, couldn't stop praising it. It was a match made in heaven.

At the end of the day, that's all you really need: great drinks, an amazing atmosphere, and even better company. Jipyeongseon delivered exactly that. If you're looking for a spot in Hapjeong that feels like a warm embrace, this is it.
